The Best Thing Since Slice Bread!!

CHOCOLATE COOKIE CUPCAKE with a Rich CHOCOLATE FROSTING

So i have been on spring break for the past couple of days which gives me a WHOLE lot more time to make cupcakes:)!!!! My family and I packed up all of our bags and took off to Lake Murray in South Carolina for a few days of peace and quiet!! (WHICH IS EXACTLY WHAT WE NEEDED) but then again any where we go its NEVER EVER quiet!!! So unlike last time i only had to make these cupcakes once, but by know means where they perfect!! lol but practice makes perfect right??

These cupcakes are defiantly comfort food!! So whenever you are feeling down, upset, or just need some happiness whip a few of these babies up and you will bouncing of the walls in NO TIME:)

INGREDIENTS:
(topping)                                                             (cupcake part)
1/2 cup brown sugar                                        1 stick butter
1 egg                                                               6 tbsp granulated sugar
1/8 tsp of salt                                                   6 tsp brown sugar
1 cup semisweet chocolate chips                      1/2 tsp vanilla extract
1/2 tsp vanilla                                                   1 egg
                                                                        1 cup all-purpose flour
                                                                        1/2 tsp baking soda
                                                                        1/2 tsp salt

1. so first you are going to want to make the topping in a large bowl by combining the brown sugar, egg, and salt. Beat until thick and then stir in chocolate chips and vanilla extract.
2.Preheat oven to 375 F.
3. Combine butter, sugars, and vanilla in a small bowl. Beat until creamy. Add the egg and beat for one minute.
4. In separate small bowl combine the flour, baking soda, and salt. Gradually add the dry ingredients to the egg mixture until fully mixed:)
5. Fill the cupcakes half full and bake for 15 mins!!!
6.Remove from the oven and turn it up to 425F. Spoon 2 table spoons of topping over each cupcake. Return to oven for 10 mins.

INGREDIENTS
(rich chocolate frosting)
2 tbsp unsalted butter
3/4 semisweet chocolate
6 tbsp heavy cream
1 1/4 confectioner's sugar
1 tsp vanilla extract

1.Put all ingredients in a saucepan except for vanilla. Stir over low heat until smooth.
2.Remove from heat and stir in vanilla. Cool slightly and add more sugar if necessary to achieve desired spreading consistency.

3.Spread on cupcakes while frosting and cupcakes are still warm.

And here they are:) i will say that though the only mistake that kind of bummed me out was that i put to much icing on them!! Iam pretty sure i know what your thinking!! you can never have toooo much icing!!! well on these babies you can!!!!! a little can go a LONG way:)

Day 1..CuPCakE disaster!!

The Starring CUPCAKE: SEA BREEZE....

I would really love to say that this cupcake was easy peasy but I would so be lying. Do not ever believe a recipe that tells you not to put the entire egg in the batter. WHAT A BIG UH OH!!! 
     So let me give you a little bit of a background on what I'am trying to accomplish here:) One Christmas ago my sweet little sister , ABY, gave me a book FULLLLL of cupcake recipes. My mission: to bake every single one of them before the summer is over and before I go off to college!! SO HERE GOES NOTHING...
     
     Exhibit A: this is not what "Sea Breeze Cupcakes" are suppose to look like!! and this is why you shouldn't always follow what the recipe says. When it says to add just the egg yolk it actually means 
THE WHOLE EGG!!
So I know you guys just can't wait to see how to make these babies:) well I'am about to let it all loose...
For these little pieces of heaven you will need:
1/4 pound of butter,unsalted (one stick)
3/4 cup of granulated sugar ( you could even use splenda blend to make it healthier:)!!)
2 LARGE EGGS
1 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup of grapefruit juice
1/4 cup of cran-raspberry juice
zest of a grapefruit
handful of raspberries
To start off you need to preheat your oven to 350 degrees F. (you can put liners in but you don't really need to)
1. In a large bowl mix with an electric mixer your butter and sugar for 3-5 mins or until fluffy. Add eggs and beat well.
2. In a separate bowl combine the flour, baking powder, baking soda, and salt
3. Add dry ingredients to the creamed mixture, alternating with grapefruit and cran-raspberry juice. Fold in zest and raspberries.
4. cook for 20-25 minutes
Now if you wanted to get real crazy you could of put only the yolks in the batter and save the whites for later. Later meaning before you cook the cupcakes or even put them in the holder you need to whip the whites until stiff peaks form!! Then fold it into the batter:) but thats only if you want to get a little CRAZY!!!!

Exhibit B: YAY!! it worked:) so this is the finish product without icing!!! With a little cream cheese icing, these things will be to die for!! <3
CREAM CHEESE FROSTING
one 8-ouce package of cream cheese
3/4 stick of butter
3 cups of powder sugar
1 teaspoon of vanilla

1. In a medium bowl mix together the butter and cream cheese until smooth
2. slowly add the powder sugar and mix until the lumps are all gone!! add the vanilla and mix until it is all blended well!!!

AND TA DAH!!! Here is the finish product. Pretty Huh?? They are also EXTREMELY delicious so this is your warning:) be careful or you could get addicted!! The only things will make sure to do next time is to separate the eggs an add the yolks first and then beat the whites and fold them in last!

PREPARE yourself for what comes next:)!! it will be great...FOR SURE!!!
